Chocolate cakes are always popular with us. I think one of our favourites is this brownie, very quick to make and very delicious!
Rich in chocolate, its taste is enhanced by a hint of salt and a touch of coffee to give it a little extra depth. Before trying out this recipe, I used to make all my chocolate cakes with cornflour and stiffly beaten egg whites to make them light and fluffy. I haven’t tried this recipe without the nuts yet, but I can’t see why it wouldn’t work just as well as a basic chocolate cake base. To be continued!
Easy brownies

Ingrédients
150 g sugar
150 g flour
150 g butter
25 mL very strong coffee (5 cac) or a small, full-bodied espresso
2 eggs
200 g dark baking chocolate
1 pinch baking soda
1 generous pinch of salt
80 g walnuts (or a variety of nuts such as hazelnuts, pecans, almonds, etc.)
Instructions
- Preheat your oven to 180°C.
- Prepare a strong espresso.
- Melt the chocolate and butter in a bain-marie until well melted and the mixture is smooth.
- In a bowl, beat the eggs with the sugar until frothy.
- Add the chocolate mixture.
- Add the baking soda, salt and flour. Mix well until smooth.
- Add the coffee.
- Chop the walnuts coarsely and add to the mixture.
- Butter and line your baking tin. Pour the mixture into the mould.
- Bake for 35 minutes.
Notes
